4 pork loin chops 1/2" thick
1/2 cup broth
3 medium red potatoes, cut into quarters
4 small carrots, cut into 1 inch pieces
2 medium onions, cut into 1/4ths
salt and pepper
fresh parsley
Heat skillet on medium high heat. Brown pork 5 minutes or so in oil. Add broth, potatoes, carrots, onions to skillet. Sprinkle with salt and pepper. Heat to boiling; reduce heat, cover and simmer 30 minutes until veggies are tender and pork is no longer pink. Sprinkle with parsley.
