2 sticks butter, softened (1 cup)
3/4 cup firmly packed brown sugar
1/2 cup molasses
1 egg
3 1/3 cups all-purpose flour
1 1/2 cups quick or old fashioned, uncooked Quaker oats
1 tsp. cinnamon
1 tsp. ginger
1 tsp. nutmeg
1/2 tsp. baking soda
1/4 tsp. salt
Beat together butter and sugar until creamy. Add molasses and egg; beat well. Add combined flour, oats, spices, baking soda and salt; mix well. Divide dough into 2 portions for easier handling. Cover and chill 2 hours.
Heat oven to 350. Roll out dough to 1/4" thickness on lightly floured surface. Cut with 5 inch gingerbread men cookie cutter. Bake on ungreased cookie sheet 8-10 minutes or until cookies are set. Cool 1 minute on cookie sheet; remove to wire rack. Cook completely before decorating. Makes 20 1 inch cookies.
