Skinny Italian Salad Dressing

Olive oil
Balsamic Vinegar
Parmigiano-Reggiano cheese

Just get your salad ready... Pour 2 seconds of olive oil, 1 second of vingar, some cheese and maybe some cracked black pepper!

Balsamic Vinaigrette

Yield: (1/2 cup)

2 Tbsp. balsamic vinegar
salt and pepper
6 Tbsp. olive oil

Place vinegar in mixing cup with salt and pepper. Add olive oil in a slow, constant stream--constantly mixing until oil is emulsified. For a tangier dressing add more balsamic vinegar.

Candied Walnut Gorgonzola Salad

The candied walnuts alone are amazing -- and amazingly easy to make! I usually make extra and serve them on the side.

1/2 cup walnut halves
1/4 cup sugar
3 cups mixed greens
1/2 cup dried cranberries
1/2 cup crumbled Gorgonzola cheese
1 Tablespoon raspberry vinaigrette
1 Tablespoon white vinegar
1 Tablespoon olive oil

1. Place walnuts and sugar in a skillet over medium heat, stirring constantly until the sugar dissolves into a light brown liquid and coats the walnuts. Remove walnuts from skillet, and spread them out on a sheet of aluminum foil to cool.

2. In a large salad bowl, combine the mixed greens, cranberries, cheese, vinaigrette, vinegar, and olive oil. Toss gently. Add candied walnuts, and toss again.

Easy Roasted Shallot Vinaigrette

1 Shallot, minced (1/4 shallot per person if increasing recipe)
4 Tbsp. extra-virgin olive oil (1 Tbsp. per person)
4 tsp. balsamic vinegar (1 tsp. per person)

Heat shallots in oil to infuse their flavor into oil (about 10 minutes) Allow oil to return to room temp. Mix in the vinegar with a whisk and toss with the salad greens.

(you can also substitue 1/2 clove of garlic per person in place of the shallot) Repeat recipe above infusing the garlic flavor into oil.

Cilantro-Lime Vinaigrette

I'm a cilantro-aholic, any recipe I find with cilantro becomes a fast favorite. It is one of those things you either love or you hate depending on your taste buds, so be forewarned, this is cilantro city!

1 cup packed fresh cilantro
1/2 cup extra-virgin olive oil
1/4 cup lime juice
1/4 cup orange juice
1/2 tsp. salt
1/2 tsp. pepper
Pinch of minced garlic

Puree together in blender or food processor until smooth (I serve it on Romaine & Tomato Salad)
