1/4 cup reduced sodium soy sauce
3 Tbsp. lemon juice
3 Tbsp. fresh basil or cilantro
3 garlic cloves, minced
2 Tbsp. fat-free plain yogurt
2 tsp. grated lemon peel
1 tsp. ground ginger
1/2-1tsp. crushed red pepper flakes
4 boneless chicken breasts
1. Combine first 8 ingredients. Set aside 1/4 cup. Cover and refrigerate. Pour remaining marinade into a large ziploc baggie and add chicken. Seal bag and turn to coat. Refgrigerate overnight.
2. Drain. Discard marinade. Place chicken in greased/oiled 9x13' pan. Spoon reserved 1/4 cup marinade over the top. Bake uncovered at 375 for 20 minutes.
