Easy Potato Chowder

4 oz. bacon, diced
1 cup diced onions
2 cups whole milk
2 cups chicken broth
1 tsp. thyme
3 1/2 cups mashed potatoes (firmly packed)
salt and pepper to taste
2 Tbsp. fresh chopped parsley

Saute bacon and onions until bacon is crisp; remove excess grease. Add milk, chicken broth and thyme; bring to a boil. Stir in mashed potatoes and simmer 5 minutes. Stir in parsley, salt and pepper. Serves 4-6
