Five Spice Turkey and Lettuce Wraps

I'm watching what I eat and this is a super-healthy meal!

1/2 cup water
1/2 cup instant brown rice
2 tsp. sesame oil
1 lb. 93% lean ground turkey
1 Tbsp. minced fresh ginger
1 lg. red bell pepper, finely diced
1 8oz. can of water chestnuts, rinsed and chopped
1/2 cup reduced-sodium chicken broth
2 Tbsp. Hoison sauce (check asian food aisle in market)
1 tsp. 5 spice powder
1/2 tsp. salt
2 Heads boston lettuce, leaves separated
1/2 cup chopped cilantro
1 large carrot, shredded (I use the pre-shredded kind)

1. Bring water to boil. Add rice; reduce heat to low, cover and cook for 5 minutes. Remove from heat.

2. Meanwhile, heat oil--add turkey and ginger--cook 6 minutes. Stir in cooked rice, bell pepper, water chestnuts, broth and hoison sauce, five spice powder and salt--cook 1 minute.

3. To serve, spoon portions of the turkey mixture into lettuce leavs and top with cilantro and carrot and roll up into wraps.
