Cheesy Italian Pan Bread

I made this bread last night with salad and Fettecine Alfredo. It was delicious..... And it is very pretty to.

2 c. water
1 c. quick oats
3 T. butter
4-5 c. flour
1/4 c. sugar
2 t. salt
2 T. yeast
1 egg
1 c. shredded moz. cheese

Topping
2 T. parmesan cheese
3/4 t. basil
1/4 t. oregano
3/4 t. garlic powder
6 T. butter

Grease 9 x 13 pan. Bring water to a boil: stir in oats and butter. Meanwhile, combine 1 1/2 cups flour, sugar, salt, and yeast in a large bowl; blend well. Add oat mixture and egg to flour. Blend until moistened. Add another 1 3/4 to 2 1/2 cups flour and the moz. cheese to form stiff dough. Knead in another 1/2 to 3/4 cups flour until dough is smooth. Shape into a ball; cover and let rest 15 minutes. Press into pan. Using a sharp knife, cut diagonal lines 1 1/2 inches apart, cuttingly completely through dough. Repeat in opposite direction creating a diamond pattern. Cover loosely with greased plastic wrap and put in warm place to rise for 45 minutes. Heat oven to 375*. Uncover dough and redefine diamond pattern by cutting up and down through to the bottom of the pan. Melt 4 T. of butter and spoon over top of dough. Bake for 15 minutes. Combine toppings ingredients and 2 T. melted butter. Sprinkle on top of partially baked bread and return to oven for 5 to 10 more minutes or until golden brown.
